December Recipes – Mexican Avocado Dip

The recipe I have is something that I get asked to make every Christmas, but is not Christmas related. Mexican Dip.

Ingredients:

  • 3-4 ripe avocados
  • 1 pkt of taco mix
  • 1 tub of sour cream
  • I can of re-fried beans
  • 3-4 large tomatoes
  • grated cheese
  • Corn chips

This makes quite a bit of dip but it will all go.

Get a largish dish (I use a Pyrex 30cm glass rectangular dish) and put the re-fried beans evenly over the bottom.

Mash your avocados and and mix in 1/3 of the taco mix – this stops the avocados from going brown (you can add some lemon juice if you like).

Spread the avo mix over the top of the re-fried beans, then mix in the rest of the taco mix with the sour cream and layer on top of the avocado layer.

Dice up some tomatoes, layer on top, and sprinkle over some grated cheese.

Then dip your corn chip/tortilla into the mix and enjoy!

Options: add some diced Spanish onion with the tomato, kalamata olives or spring onions to the top!
